How big should plex instance be?

So I have my plex in a VM which is fine. I have maybe over 700 movies and a little under or above 200 shows

Anyways. The VM is about 130gb and from time to time l transcode my stuff. So do I need it to be bigger plus can I somehow reduce how much space plex consumes when it generates thumbnails?
