Chicken Waste

Right now, our restaurant in participating in the shared table food donation program, so waste is a bit confusing lately. I’m wondering something: if you have chicken in cool down that will be shredded to make soup the next day, do you record that chicken in waste numbers? My store does and it makes no sense, because we definitely don’t record the char-grilled sliced chicken in waste numbers… lmk
