No 5.1 Audio on Roku Ultra - Solved
In case this helps someone else. If you have a Roku device, there is an obscure setting that may only push 2ch PCM no matter what the audio settings are.
I had zero 5.1 on YTTV until I found this post on a Roku help forum. Roku should address this since it was so difficult to find and it totally negates Dolby Digital if not aware:

Did you check to see if you have any of the "Volume" modes enabled on the Roku? That will force STEREO, regardless of your master settings.

Keep in mind that in order to show the Volume Mode settings (there's two modes and an Off mode), you need to be streaming content first. Example: Start streaming something on Netflix that you know is a surround sound film/tv show. Most are. While you are streaming that film/tv show, press the asterisk button on your Roku remote. You should get a sidebar menu on the left side of your screen.
Here's a Roku youtube video (short video) that shows the exact process. You want to make sure "Volume Mode (see video) is set to "Off" between the angle brackets. Otherwise, if it's set to either Leveling or Night, you'll only get stereo. If you that it's set for "Leveling" or "Night", I would set it to "Off", and then reboot the Roku, just to make sure everything is refreshed.
