I had heard that is possible to harvest sotol without killing the plant unlike harvesting blue Weber agave for tequila. I Googled and this came up. So, I am curious if anyone knows if there is “sustainable” sotol available in the US by distilleries that harvest the pinas without killing the plant? If not, I would think there would be a niche US market for people willing to pay for sustainably made sotol in the US or Mexico.
