Questions about food storage container sizes, not shelf life

As weird as this is going to sound, I've found tons of information on how long things will last vacuum sealed or frozen or whatever, but little on how much will fit in smaller containers. Think how many lbs of flour goes into how many wide mouth quarters jars to vacuum seal. (5lb made 4 jars full, in case you wondered) Im not looking to build a bunker with 10 years of food supplies, I'm looking to store excess from a large purchase, or have a few days of food on hand for "Tuesday " as it were. We live in an HOA and in a small house so space is limited. I'm not looking to have tons of food on hand, just a few weeks of staples I can rotate through or be glad I have it when something like Helene happens again. We thought we had weeks worth of food, and we did, until the freezer went down with the power out and the food was bad in a day. We grilled what we could but then the rest we lost. I had canned foods and we went through that and "pouch" foods leaving us nearly nothing in reserve after a week. My husband is working on a generator for the most important aspects of life and I'm working on food. I've found tons of charts about shelf life in vacuum sealed containers, but next to nothing on how much fits into what size mylar or mason jars. That kind of thing. I have a dehydrator (again) for when my herb garden is in full swing this spring/summer and I'm buying larger quantities of things we already use to seal up and store. Pasta, pinto beans, flour, that kind of thing. Im just not sure about container sizes. I plan on using jars for things we will rotate through like flour, oatmeal, etc and bags for freezing and storing dry items long term (also oxygen absorbers).

Any tips would be appreciated. I read the LDS book on prepping I found online yesterday, and due to my former occupation it's very much a review, but again little guidance for storing in bags or jars.
