MGS5 - Should I use the chicken hat?

Does it matter if I use the chicken hat for missions later on or from the next mission i'm about the play 'over the fence. I feel intimidated by the stealth and how much i have to keep track off in terms of gameplay. I don't really know how to describe this but i feel overwhelmed by the stealth system, I see gameplay of other people's playstyles while I'm just used to crawling and tranqing guards or soldiers when i have the opportunity to do so.
