Did anyone work at Shio Ramen on Broadway(RIP)?

This is a dumb post, ik, but.. Shio had the best tasting water I can remember having.. does anyone know how they did their water? Like what filter system did they have 😂 shit was crisp as hell. They had really good ramen, but I'd literally think ab how good their water was 😂🙈
