Where to find a genuine croque madame/monsieur

Hi foodies I’m after a genuine croque madame/monsieur. I’ve never found one that I’ve been satisfied with in Sydney. The last one I had was basically a ham and cheese toastie! Bechamel and melted cheese on the outside is a must, but I just can’t seem to find one that is genuine. Any recommendations would be great. Thanks!!
