Best time for Florida from the U.K.

Ever since we went to Paris (five years in august) my son has constantly asked me and my now ex when (not if) we can go to Florida, I’m wondering when is the best time to go and what sort of daily budget (food, toys and other stuff) I could set for 3 adults and 1 child?
