Dining Advice

Hi! My partner and I (33 and 36 yo) will be visiting WDW from March 3rd to March 8th, staying at Port Orleans French Quarter with park hopper tickets. We booked with the free dining promo and have a quick service dining plan included, but we want to break up the week with a table service dinner.

We're planning on going to Animal Kingdom on Wednesday 5th, which seemed like the best bet as the park closes early & we have nothing planned for the evening. I booked us into Shiki-Sai at EPCOT at 7:30pm as we both love Asian food, but I've realised this is the first day of the Flower & Garden Festival. I'm now wondering if this is going to be a terrible idea and if it'll be super busy - mainly as we won't be trying to enter EPCOT until the evening and, once we do, we will likely want to grab a drink before/after in the World Showcase and find a spot to watch Luminous while we're there.

Any advice would be much appreciated - would it be worth changing the reservation to a restaurant outside of EPCOT (there's availability for Toledo, Kona Cafe, Morimoto Asia & we like the look of their menus)? We'll be doing a full EPCOT day on Thursday 6th & they have availability at Shiki-Sai then, would it be better to change the reservation to the Thursday (I was initially hesitant to book in for a table service dinner during our EPCOT day as I think we'd both enjoy sampling the booths/eating snacks around the world)?

If we do push ahead with the reservation, would it be better to get a bus from AK to the Boardwalk or Beach/Yacht Club and enter through the International Gateway rather than getting an EPCOT bus to the front of the park?
