Brain fog and long COVID?

I will be entering student teaching next semester and not particularly looking forward to it. I had COVID twice within a one year span and the second one was so bad I was on bed for days.

Ever since then I have noticed that my energy levels have been low. I also get this brain fog sometimes which makes it really hard to think. My speech has also slowed down considerably people have started noticing it. It usually happens in the evening. I have trouble remembering things and finding words to say so I stutter and end up not finishing my sentences.

I used to be really social and good at communicating. Now it takes me forever to read and write something because I get overwhelmed after a while and need to take a break. I am 29 years old. I don't smoke or do drugs. I am also fairly active. Are any of you experiencing this? Has this affected your teaching?
