New Plex Server... Hardware Opinions Needed!

Hey everyone, longtime reader first-time poster.

My wife and I have been toying with the idea of jumping fully into a dedicated Plex server for awhile. The fact that our external hard drives are full, I think now might be the best time to go ahead and do it.

I've been looking at a bunch of threads, and even though I think I know what hardware we need, it would be great if someone else could take a look at our potential build. We are primarily Windows users and have no Linux experience to go into Docker or any of that. I know we will probably utilize the *arrs as they seem incredibly useful and will speed up our process immensely!

For the build we are looking at a mini-pc with a DAS or NAS. At this time, based on our limited knowledge, I think a DAS might be better as neither of us has built a PC before, or done any hardcore coding.
