Why could we not do an operation to allow humans to see more colors

I know humans have 3 color receptors cones or whatever so we couldn’t fathom more, but like a mantis shrimp has 16. What’s stopping some crazy fuckin scientist from taking the eye off a mantis shrimp, taking the eye off a human, and Jerry rigging the optic nerves together
