JRPG recommendations?

In the mood for a JRPG and looking for recommendations. What’s your favorites? Loved DQ11XI and SMTV, FETH is now one of my favorite games of all time. Doesn’t have to be super difficult but I like a challenge (maddening on FETH was a fun challenge for me). Odd request but big plus if the game doesn’t let you change the difficulty setting once you start it. I loved FETH system where you could lower it if you wanted, but never go back if you changed it. Makes beating it so much more satisfying imo.
