Suggestions for inexpensive dinner party recipes?

My husband and I love hosting people at our home for dinner parties, but I would love to streach our hosting budget further so we can do so more frequently. Sometimes we do potlucks, but I really enjoy preparing a (semi) fancy spread for a few friends, and usually they’ll bring wine/desserts.

Any suggestions for inexpensive but still classy meals we should try? I'd love ideas, or specific recipes if you have any to share. We are not very picky eaters and have friends with different dietary restrictions, so the wider the variety the better!
