What are your must-read books?

I'm trying to make a list of good books that will properly introduce me into the genre. I'm new to non-YA fantasy and am currently reading Words of Radiance. Way of Kings was my first non-YA fantasy book, and it was amazing (and WoR is even better). What are books (series, I don't like stand alones) you think I should read before anything else? It doesn't have to be finished already, but I'm reluctant to start ones like ASOIAF which I know it'll take years (if at all) until the last book is published.
