Another winter tire/rim post

Really hating it that RS 2025 came with 21. Planning to go down to smaller but dealer told me not go to lower than 19 and the measurements should be 255/55/19. Any suggestions for tires and rims? I'm in Ottawa, ON so any recommendation for where to purchase and install them is also appreciated. Thanks.
