Prime Rib and Yorkshire Pudding Challenge
Calling all oven jugglers! I’m super excited to be doing my first prime rib this year. I’m using Kenji’s reverse sear method. It goes low and slow and then pulls for a rest (30-90 minutes) before a 500-550 blast for 8 minutes. I only have one oven. Yorkshire puddings take 10 minutes to heat the fat and 25 minutes to bake in a 450 oven. Total time: 35-40 minutes.
Option 1: Put the Yorkshires in at the end of the rest, pull them and the blast the beef.
Or
Option 2: Blast the beef, take it out and hold it while the puddings cook. I’d carve it 10 minutes before puddings are done.
What’s the best option?
