Open jaw booking using upgrade voucher

Is it possible to book an open jaw flight using a Barclay card upgrade voucher and Avios?

An example could be flying from London to Mexico City and returning from Cancun back to London. Another example could be flying from London to Delhi and returning from Mumbai back to London.

How does one manage to do something like that?
